I love the word "scrumpdillyicious." It completely describes how I feel about these muffins.

If I have to turn on my oven to bake (I have an aversion to baking, can you tell?), then it's muffins I usually opt for.

I'm a muffin making fan because I can turn out a healthier treat that usually makes Mike happy, and is what he terms "blog worthy."

I have my own muffin making style. I rarely mix the wet ingredients first, then add the dry ingredients like a true baker would.

You can see why baking isn't my thing. I lack the patience and preciseness required to turn out bakery quality goods.

And that's just fine by me. I'm happy with my lightly sweetened, whole grain pineapple muffins. I've got muffin making down to an art now.

But I have to say, the trick to making a lighter whole grain muffin is the Bob's Whole Wheat Pastry Flour I'm so fond of. It definitely gives baked goods a lighter texture over a heavier standard whole wheat flour.

Scrumpdillyicious Pineapple Mini Muffins
  • 4 ounces sugar free pineapple juice
  • 2 large egg whites
  • 5 ounces low fat Greek vanilla yogurt
  • 1 teaspoon vanilla
  • 1 tablespoon coconut oil, melted
  • ½ cup brown sugar
  • 1 ½ cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 cup pineapple tidbits
  1. Preheat the oven to 350 degrees and generously spray a nonstick mini muffin tin with cooking spray.
  2. Combine pineapple juice, egg whites, yogurt and vanilla in a bowl. Combine until smooth.
  3. Add melted coconut oil and sugar. Combine well.
  4. Add flour and baking soda. Again, combine well.
  5. Fold in pineapple tidbits.
  6. Fill muffin wells to the top, then bake for 15 - 20 minutes until a toothpick inserted in the center comes out clean.

And if you really want a treat, break out your bread machine to make these yeasty apple breakfast muffins. I never could decide if these were really muffins, or actually breakfast buns. But since they look like muffins, that's what I decided to call them.
