Santa Hat Cupcakes

Christmas is finally here.  Well at our house at least. Christmas in South Africa is usually a really hot one, if Santa was real he would be wearing a bathing suit or just become a nudist, but that is no reason not to go all out with Christmas.  Just look at our house.

Its finally time for a festive recipe.  These little Santa hat cupcakes are cute and delicious, they will be a sure hit for any Christmas get together.

Ingredients

Cupcakes

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1 tbsp cornflour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp vinegar
  • 1 tbsp vanilla
  • 1/4 cup sunflower oil
  • 1 cup water
  • 12 strawberries

Frosting

  • 1 cup margarine
  • 3 1/2 cup powdered sugar
  • 1/2 tsp vanilla
  • 1/4 cup non dairy milk

Directions

Preheat oven to 180 degrees C.

In a large bowl combine the flour, sugar and cornflour.  Add the baking powder and baking soda. Pour the vinegar over the baking soda.  Add the rest of the ingredients.  Stir until well combined.

Pour 3/4 way full in the muffin cavities and bake for 20 minutes or until a toothpick poked into the center comes out clean.

In a large bowl combine all the frosting ingredients and beat until fluffy.

When the cupcakes have cooled. Frost with a tbsp of frosting.

Place one strawberry in the center and finish of with a dab of frosting at the top of the strawberry.  Repeat.
