Sabudana Vada (Sago Fritters)

Sabudana Vada is one of the most famous Maharashtrian snacks. And its deep fried, so sure it will be tastier, no doubt. People usually eat it during fasting, and is great as an evening snack. Its soft from inside and crispy outside.

Sabudana Vada (Sago Fritters)

It’s a special snack made during fasting especially during Navratri. This is a no onion no garlic recipe. It is commonly served with green chutney and sweetened yogurt. Sabudana khichdi is also is a great breakfast option and tastes yum! The crunchy peanuts that come with every bite are something I look forward to in the Vada!

And trust me, it’s really easy to make. The one downside to these (more so than many of its deep-fried counterparts) is its ability to retain oil, but it’s worth it. Sabudana should be soaked in water for at least for 3 to 4 hours. It can be eaten as breakfast, snack and are best for lunch boxes. It’s a great snack and goes particularly well with hot Chai.

Sabudana Vada (Sago Fritters)

Ingredients:

150 grams Sabudana (Sago)

4 medium-sized potatoes, boiled

3/4th cup roasted peanuts

2 tsp. ginger green chillies paste

1 tbsp. chopped coriander leaves

4 tsp. salt (or as per taste)

Oil for deep-frying

Sabudana Vada (Sago Fritters)

Method:

Soak Sabudana for at least 4 hours (it will soften perfectly) before you start preparing the fritters. Remove the skin from the boiled potatoes and mash them. Drain any excess water from the soaked Sabudana and add the mashed potatoes.

Crush the peanuts coarsely and add to the Sabudana and potatoes. Add the remaining ingredients (this recipe is for fasting, however if you are not fasting, you may add garlic paste also). Work the mixture till it comes together. Once the mix is ready, take a small amount on your palm and pat like vada or you can roll in any shape you like.

Heat oil in a pan and deep fry the Vadas on medium low flame until they turn golden brown in color. Remove from heat, drain on absorbent paper and serve with green chutney and curd or hot Chai!!
