These uber yummylious S'mores Bars are just perfect for those munchies moments! Layers of crushed biscuits, melted chocolate and fluffy marshmallows toasted and then sliced into bars and even the kids can get involved!

A S'more (Some More) is an american traditional nighttime campfire treat with fire roasted marshmallow, chocolate in between graham crackers sandwiched together. Did you know there is a National S'more day celebrated August 10th?! Yep this is true, maybe that's a holiday I need to start celebrating!

Here in the UK Graham Crackers are not cheap, if you find them at all, so the next best alternative is Digestive biscuits, which I happened to have in the cupboard left over from Christmas, so this was my way of using them up.

As these S'more Bars are nut free they make great Friday lunch box treats for my kids, they usually have a treat everyday which is either a cheese string or yogurt stick with 3 fruits, but on a Friday I allow them a slightly naughty treat with 2 fruits! It's all about balance.

I think these bars remind me of warm summer nights, when we have had a BBQ and made S'mores, so as its freezing cold outside, I thought I would bring a little summer in the winter!

Ingredients:
150g Digestive Biscuits
70g Butter
100g Milk Chocolate
50g Marshmallows
4 Broken Digestives
70g Chocolate Buttons

Add digestive biscuits to a food processors.

Blitz until you get fine crumb like texture.

Add the melted butter to the biscuit crumbs.

S’more Bar

Mix well making sure all the butter is mixed in.

S’more Bar

Pour into a lined baking dish or tray and press firmly into the bottom evenly.

Melt 100g milk chocolate and then pour onto the biscuit base.

S’more Bar

Evenly spread over the biscuit based covering the sides and edges.

Sprinkle on half of the marshmallows over the top

Bake in the oven at 180c for 10 minutes, the marshmallows with brown slightly.

Breakup the 4 biscuits into little pieces and sprinkle over the marshmallows.

Sprinkle on half of the chocolate buttons

S’more Bar

scatter the remaining marshmallows and chocolate buttons

S’more Bar

Place back in the over at 180c for another 10-12 minutes, until the marshmallows have the slightly toasted look.

Allow the S'more bar to cool completely.

Slice into 16 pieces and enjoy.
