Apple Chai Spiced QuinoaHave I told you how much I love quinoa?     I do believe I have. I have only had it for dinner until I whipped up this recipe for Apple Chai Spice Breakfast Quinoa. Quinoa is simple to cook just like oatmeal. This breakfast bowl combines sauteed apples and my A+mazing chai spice mix. I loved every spoonful. You will too.

Apple Chai Spice Breakfast Quinoa
1/2 cup dry quinoa
3/4 cup water
1/4 cup almond milk
Apple topping
1/2 apple, cored and diced
2 tablespoons earth balance
1 tablespoon chai spice mix
1 tablespoon ground flaxseed
1 tablespoon light cream
3 tablespoons water
1 tablespoon maple syrup
1 teaspoon organic brown sugar
1 tablespoon lemon juice
1. For quinoa: In a small saucepan bring quinoa, milk, and water to a boil. Then reduce heat cover and simmer quinoa 15 minutes until fluffy.
2. For apples: In a small skillet over medium-high heat, add butter (1tbsp.) earth balance, water, and lemon juice. Saute apples for about 4 minutes. Reduce heat. Then add light cream, chai spice mix, and (1 tbsp) earth balance, maple syrup, and brown sugar and continue sautéing until apples become tender, about 5-6 minutes. Stir throughout adding water so that liquid does not cook off.
