Potato Pizza Bites

Who doesn’t love pizza? The main ingredients of this dish: Potato, Tomato, Onion and Cheese. Life cannot be simpler!! These mini potato pizzas are surprisingly easy to make and taste delicious.

No words can describe my intense love for pizzas. And pizza has a unifying force and it brings people together. This would be a big statement to make … but I think, this simple dish with cheese can inspire world peace. (YES!! :D that’s so right) It’s just that good.

You may customize the filling of these bites your way and can be made to suit everyone. The best part about this recipe … no flour no dough!! The sauce can be easily made at home and will be loved by everyone. And it’s ready quite quickly. You may make assemble everything after the guests arrive and just pop them in the oven for the cheese to melt. And tada… they’re done!

A simple Cheese Pizza makes the world go round. I feel a little empty inside when I can’t get my hands on a slice. Whether you eat it at some fancy Italian restaurant, or make it at home, pizza is one food that most people love to eat. For the love of pizza and cheese, you got to try this. Potato Pizza Bites

Ingredients:

For the base (makes 12 bites)

6 potatoes, medium sized

Vegetable /olive oil for brushing potatoes

A pinch of salt

For the sauce (makes around half cup)

1 tomato, medium sized

1 onion, medium sized

1 tsp. ginger garlic chilli paste

1 tsp. salt or as per taste

½ tsp. pepper powder

½ tsp. oregano

½ tsp. cumin seeds

½ tsp. Vegetable /olive oil

For the filling

2 small tomatoes, finely chopped

2 small onions, finely chopped

1 tbsp. boiled peas

1 tsp. salt

1 cup grated cheese

Coriander, finely chopped for garnish (optional)

Potato Pizza Bites

Method:

For the sauce: Cut the tomato and onion into small pieces, grind them and make puree. In a small pan, heat oil and add cumin seeds. When they splutter, add the ginger garlic chilli paste and puree and let it simmer until the mixture is reduced and the water is evaporated (around 6 – 7 minutes on medium heat). Add salt, pepper and oregano and keep it aside.

Preheat the oven to 200C. Wash the potatoes and prick them with a fork. Place them on the turntable of the microwave and cook on high for 2 minutes. Now, turn the potatoes over and repeat. Remove and check, if they are undercooked microwave for another minute.

Cut all the potatoes in halves (If you don’t like the skins you may remove them, however, they taste great with the skins too) Scoop the filling out with spoon Cut each potato in half, then use a spoon to scoop the filling out (use this in the filling later), leaving around half a centimeter layer of potato.

For the filling: Mix tomatoes, onions, peas and the mashed potatoes (I used potatoes that I scooped). Add salt to this mixture and keep it aside.

Now, take a baking tray/dish and place the potatoes, skin side up. Brush some oil and sprinkle some salt over them. Bake them at 180C for 12 minutes; the skin will be a little crispy by now.

Turn the potatoes over and apply a little pizza sauce over all the potato pieces. Place some filling over the sauce, top it with grated cheese. Grill the potatoes for 5 minutes or until the cheese is melted. Garnish with chopped coriander and serve.
