Popeye’s Fried Chicken

 

In my honest opinion there is nothing that tastes better than popeye`s fried chicken, now to many of you who is reading this might think what is wrong with this guy, this popeye`s fried chicken doesn`t even count as you healthy lunch ideas. Honestly I agrees with you but at times you just feel like having something unhealthy and this is one of those occasions. Any-ways this popeye`s fried chicken recipe is just the thing perfect for watching movies or having them as or during your meals. At first when you are making it you might feel it is kinda hard but you`ll get use to it after the first two attempts. Any-ways enjoy this recipe and let us know how you regard it and do tell us how you have incorporated his recipe in your otherwise healthy lunch ideas.

Ingredients:

  • 3 cups Self-rising flour
  • 1 cup Cornstarch
  • 3 tbl. Seasoned salt
  • 2 tbl. Paprika
  • 1 teas. Baking soda
  • 1 pk. Italian Salad Dressing Mix Powder
  • 1 pk. Onion Soup Mix (1 1/2 Ounces)
  • 1 pk. Spaghetti sauce mix (1/2 Ounce)
  • 3 tbl. Sugar
  • 3 cups Corn flakes, crushed
  • 2 Eggs, well beaten
  • 1/4 cup Cold water
  • 4 lb. Chicken, cut up
Directions:
  1. Combine first 9 ingredients in large bowl.
  2. Put the cornflakes into another bowl.
  3. Put eggs and water in a 3rd bowl.
  4. Put enough corn oil into a heavy roomy skillet to fill it 1″ deep.
  5. Get it HOT!
  6. Grease a 9x12x2 baking pan.
  7. Set it aside.
  8. Preheat oven to 350~.
  9. Dip chicken pieces 1 piece at a time as follows:
  10. 1st Into dry coating mix.
  11. 2nd Into egg and water mix.
  12. 3rd Into corn flakes.
  13. 4th Briskly but briefly back into dry mix.
  14. 5th Drop into hot oil, skin side down and brown 3 to 4 minutes on medium high.
  15. Turn and brown other side of each piece.
  16. Don’t crowd pieces during frying.
  17. Place in prepared pan in single layer, skin side up.
  18. Seal in foil, on 3 sides only, leaving 1 side loose for steam to escape.
  19. Bake at 350~ for 35-40 minutes removing foil then to test tenderness of chicken.
  20. Allow to bake uncovered 5 minutes longer to crisp the coating.
  21. Serves 4.
  22. Leftovers refrigerate well up to 4 days.
  23. Do not freeze these leftovers.
  24. Leftover coating mix (1st 9 ingredients) can be stored at room temp in covered container up to 2 months.
