I know I wax poetic about the end of summer; I hate to see it end and sometimes feel like all that is good is gone and my life will be nothing but snow and wind, carrots and squash. And then I remember pomegranates. How I love these jewels of the fruit world. So this week, while as late as ever ( the apologies must be getting old...like me!), I still had to share this Pomegranate Lemon Fizz for Friday Cocktails. Talk about easy? It's so simple and yet so bright and tangy and beautiful and delicious and holidayish and...and well, it's perfect for this season!
I stayed far away from Pomegranates for years; more because of the scuttlebutt about them, not from actual experience. My daughter used to help a woman she babysat for get ready for her annual holiday party and she always ended up cleaning the pomegranates and they sounded messy and impossible.
But one day I decided to give them a try and really...not that big of a deal...what the heck was all that fussing over? I've now read lots of tips for how to remove the seeds from the shells but for me, the water method is my favorite because it keeps me, my counter, my floor and my hair from becoming drenched with the precious juice. Take a peek at this post for how easy it is to do and how clean you'll stay through the process! I used bottled juice but I do love having some arils for the garnish. It's optional but so pretty that you really should try them.
The recipe for this Pomegranate Lemon Fizz cocktail calls for simple syrup and lemon juice. In a pinch for time? Just sub in an equal amount of frozen lemonade. Depending on how many you're making, combine how much you would need for both simple syrup and lemon juice combined and then use that amount of frozen lemonade. Trust me I'll be doing this occasionally over the holidays because I plan on this one being made a LOT! Hope you will do the same. Cheers!
