Today I decided to make Pineapple and Coconut Ice Cream. It has a very Island feel and it tastes creamy and delicious! I think that Ice Cream is my favorite summer time treats. It is even better when it is homemade. Don’t get me wrong I love to go out with the family to get ice cream, but there is something special about making it at home for your family.
Print RecipePineapple and Coconut Ice Cream
Ingredients:
1 can of cream of coconut
1 1/2 cups half and half
1/2 cup flaked coconut
3/4 cup crushed pineapple drained
Directions:
Combine cream of coconut, half and half and flaked coconut. Pour into a ice cream maker and process according to the manufacturers directions.
When mixture is finished, add pineapple and freeze in a air tight container overnight.
