Pimento Dip

I am not normally a big dip person. Most of the time they have cream cheese in them (I am allergic) or have so much mayo or sour cream and it’s all I can taste. This pimento dip only has 1/2 cup of mayo and I used organic to get the best possible tasting version too.

This dip is delicious on crackers and vegetables, I put together a little veggie plate with celery, mini peppers, cucumber (from our garden!). snow peas, and carrots. And while I wouldn’t say this dip is the healthiest thing ever it’s all about moderation. Veggies + dip = moderation in my mind.

We had a few people over yesterday afternoon for a little wine party and this ended up more than half gone. People were surprised it didn’t have cream cheese and only 1/2 cup of mayo! The leftovers are going on sandwiches this week for Scott’s lunch. A little change up from the normal hummus or mayo with olive oil he uses. And the great thing about this dip is it comes together in about 10 minutes and you can make it the morning of a party. My one challenge? Finding a small jar of pimentos. Target had a few large jars but I only needed 1/4 cup worth and would never use them for anything else. I ended up finding the last tiny jar with just enough on the bottom shelf. Yeah for not having to waste any of these.

A dash of hot sauce or seasoning blend is really key, it give it a little kick!

  • 11 ounces goat cheese, softened enough so you can stir
  • ½ cup mayo
  • ½ cup shredded cheddar cheese
  • ¼ cup pimentos, diced
  • 1 tsp onion powder
  • ⅛ tsp hot sauce or spicy seasoning blend
  • 2 scallions finely chopped
  • Salt/Pepper
Instructions
  1. In a large bowl stir all the ingredients together and refrigerate for at least an hour before serving so the dip has a chance to firm up.
