Hello everyone!  I have missed you guys and I hope you have missed me too.  It has been a rather wild 8 days and the wildness does not look like it is going to let up anytime soon.  First, the neighborhood Internet has been down more than up (and up only when I am not home!) until yesterday afternoon.  During that time I was finally on the game show, I won a Peeps contest sponsored by Wilton, we had Rocket’s birthday party, today is actually Rocket’s second birthday – it also snowed today after being in the 80’s yesterday and to say that my current work project is a headache does not cover it.  On the plus side, I do have a recipe to share that is very tasty!

Let’s start with the game show:  I will be on TV here in the OKC area on April 21 at 6:30 PM CDT.  I did not win but I was very respectable by not getting any answering I buzzed in on incorrect but it all boils down to the last card you choose and the card I chose had me losing 1,500 points and the guy who won picked a card that gave him an extra 2,500 points.  There were lots of sports questions and I’m not much of a jock – but I played well and had a great time so I’m very happy with that!  It should be on YouTube right after that so I will put on link when I get it.

I read Hungry Happenings just because she does amazing things with food – and they look so cute.  I never miss one of Beth’s posts.  She had a contest to win a bunch of Peeps items including a Peeps cake pan – and I won!!  Look at all this Peeps goodness!!

We had a great birthday party for Rocket – here’s a picture of the table and of the Birthday Boy – he had a Daniel Tiger (of Mr. Roger’s Neighborhood fame) party and his mom put it together all with free printables!  Didn’t she do a great job?

Today is his birthday so we are having a special birthday supper for him full of chicken nuggets and French fries……..his favorite!  It snowed today and is very cool and windy outside so we won’t be playing outside with any of his cool new toys like a Radio Flyer wagon.  Maybe later in the week.  I know you can’t see it but there is snow falling in this picture:

Work?  I got a new supervisor last fall and recently needed to understand some goals and timelines so of course, according to Murphy’s Law – I now have more deadlines than I can possibly ever meet and I don’t believe her and her direct supervisor like me much now.  I think workplace bullying just about covers it.  Here’s hoping I can get a new job before I have a heart attack.  I’m sure one day I will look back on this and laugh but right now, to stave off getting fired for not keeping up, I will be working not only at work but also at home nights and weekends for a while. I have never been pulled in so many directions and demanded to stand and deliver results immediately in my entire life.  Mr. Picky Eater is so concerned he is making a trip with me Wednesday just to make sure nothing happens to me. My posts will be a bit sparse but just know I would much rather be talking to you than what I am doing.  #cantwinforlosing!

Now let’s forget about THAT and get to the good stuff!  I loved these in fact; all of us except Top Girl loved them!  Top Girl does not like any kind of icing type topping so she wasn’t a fan.  She loved the Peeps!  My co-worker Cindy brought me the March 2014 edition of Ladies Home Journal.  She marked several articles and recipes she thought I would find interesting.  One of them was title Sugar Cookie Sheet and I fell in love with the pretty plaid icing pattern on top.  So I made it.  Let’s just say I really need to work on my frosting skills but I did my best, the Peeps made them look adorable (part of my winnings from Hungry Happenings) and they tasted great!  So with full credit to Ladies Home Journal – here is the recipe.

Ingredients for sugar bars:

2 ½ Cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

½ Cup unsalted butter, soft

1 Cup sugar

1 Large egg plus 1 large egg white

2 Tablespoons Sour Cream

1 teaspoon vanilla extract

Directions for sugar bars:

Pre-heat oven to 350F.  Line a 9 x 13 dish or pan with parchment paper and allow the edges to hang over the sides.

In a bowl, whisk together flour, baking powder and salt.

In a mixing bowl, beat together butter and sugar until light and fluffy.

Stir in egg, egg white, sour cream, and vanilla until well-blended.

Fold in flour mixture until just blended.

With greased hands, press mixture into pan then bake for 17 – 19 minutes or until lightly brown.

Remove from oven and allow pan to cool completely on a wire rack.

Ingredients for frosting:

6 Tablespoons softened unsalted butter

2 ½ Cups confectioners’ sugar

3-4 Tablespoons milk

½ teaspoon vanilla but instead, I put in the inside of one vanilla bean.

Directions for frosting:

Put it all into a mixing bowl and mix until smooth

If you want to do the plaid top, take a few Tablespoons out and put a few drops each of the colors you want to use.

Pipe on in a plaid pattern.

Or just put the white on – it’s very pretty.

Store tightly covered in the fridge!
