Peanut Stir Fry

Healthy snack for evening coffee. Kids would love it too. To ease the process, shelled peanuts are readily available. Ingredients:
Peanuts- 3 cups Water- 5 cups Salt- as per taste
For Seasoning: Onion- 5  Red Chilly-3 Mustard- 1 tbsp Oil- 1 tsp Curry Leaves- few
Method: Peanut Stir Fry Wash Peanuts and pressure cook for 5 cups of water with salt for 8 whistles in a pressure cooker.
Once the pressure comes down, drain water and set the peanuts aside.
Finely chop onions and heat a wok with 1 tsp oil.
Add mustard curry leaves, Red chilly and fry it well.
Add onions and a pinch of salt and saute till onion turns crisp.
Peanut Stir Fry Add drained peanuts and mix it well to coat seasonings. Serve hot with coffee. Peanut Stir Fry
