Life is often about the simple things. Those little gems of joy which just make you happy. This week has been stressful, and yes I am fully aware it is only Tuesday! So a bit of joy is what we needed in this house.

Yesterday I had a “suspicious” looking mole removed from the back of my leg (three stitches thank you very much) and left the skin specialist feeling down right sorry for myself and hubby, who was equally jabbed, poked and prodded. All on top of preparing for a job interview I had today; to say that we needed a delicious pick-me-up last night was an understatement. Enter possibly the easiest, what I like to call, ‘pantry dessert’. Pantry Desserts can be made at the drop of a hat with ingredients found in most country pantry’s.  Generally at home Aunty Jean has a pantry full of preserved peaches which are so juicy and plump. Unfortunately in the city my next best option is tinned peaches in syrup.  {well until I get a dream pantry and have heaps of space/time and an orchard!}

Print Prep time 10 mins Cook time 20 mins Total time 30 mins   The crumble mix is an old school classic which can be used as a beautiful golden topping for as many fruit flavours you can think of. Author: Emmy Recipe type: Dessert Share with: 6-8 ingredients
  • ½ cup brown sugar
  • 100 grams plain flour
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • 60 grams unsalted butter
  • 1 x 825 gram tin of peach slices in syrup
  • 1 teaspoon vanilla bean paste
method
  1. Preheat oven to 200 degrees C.
  2. In a bowl combine brown sugar, flour, baking powder and spices.
  3. Add butter and using your hands rub the butter through the dry ingredients until it combines to form crumbs. {Using your hands is essential to achieving the amazing crumb texture. The warmth of your hands is a nice gradual heat so the butter forms a crumb without melting completely.}
  4. Drain the peach slices then pop them into a pie dish and stir through the vanilla bean paste.
  5. Sprinkle the crumb mixture over the peaches, so they are covered.
  6. Place the crumble in the oven for about 20-30 minutes or until the crumb browns.
  7. Serve hot with a generous dollop of cream or ice-cream.

So if you need a little bit of sunshine in dessert form this is for you. Like most old classics you can gussy this recipe up; try using apples and a couple of tablespoons of frozen raspberries, pears or different spice combos.

This pantry peach crumble was bought to you in a gorgeous vintage bowl which was part of my Granny’s collection. I absolutely love the floral print and delicate gold scalloping around the edge. Dessert absolutely tastes better in vintage.
