How To Make Tomato And Coriander

Theres nothing like the warm sensations of a spicy tomato soup to relax and warm you up on a cold night! Here’s my Indian version of the classic tomato soup.

Paleo Indian Vegetarian Recipe – Tomato And Coriander

Ingredients


  • 3 tbsp coconut oil
  • 2 onions (chopped)
  • 1 kg tomato (sliced)
  • Small piece of ginger (chopped)
  • 2 x 3 finger pinches cumin (ground)
  • 2 x 3 finger pinches coriander (ground)
  • 3 finger pinch chilli powder
  • Salt
  • 3 Green chillies
  • 50 g fresh coriander (chopped)

Method


  1. Fry onions in oil till soft.
  2. Simmer uncovered the tomatoes, ginger, cumin, coriander, chilli powder and salt until mixture gets thick.
  3. Add chillies next and cook for about 7 minutes until the mixture gets fairly thick.
  4. Stir in the fresh coriander, serve and enjoy!
