Zesty Citrus Salmon with Sesame Seeds

PREP/COOK TIME: 25 minutes

This fruity dish is made with salmon, a heart-healthy fish that tastes great. We are flavoring the salmon with orange and lime juice (although you can stick to one or the other, or even swap the juice for grated zest) plus some sesame oil.

The salmon is cooked in the oven. Alternatively you can pan-fry it on the stove.

Mixed colorful vegetables make a nice side dish and we like to cook those in a griddle pan to get attractive char-marks on them. Choose any seasonal vegetables you like. This recipe makes enough for 4 people.

Ingredients:

1 tablespoon sesame seeds
1 tablespoon orange juice
1/2 tablespoon lime juice
1/2 teaspoon sea salt
1/2 teaspoon ground pepper (black or white)
2 teaspoons sesame oil
4 salmon filets (about 1 1/2 lbs total)

Suggested Side Dish:

8 cherry tomatoes
8 green onions or baby leeks
8 baby carrots
Cooking oil, as needed

Method:

Put the sesame seeds in a dry skillet over a low heat, shaking it from time to time, until the sesame seeds are golden and fragrant. This will take about 5 minutes. Keep an eye on them because they can burn quickly.

Preheat the oven to 450 degrees F. Arrange the salmon filets on a greased baking dish. Brush the sesame oil on top. Combine the orange and lime juices with the salt and pepper. Brush this over the fish. Sprinkle the sesame seeds on top.

Bake the salmon for 8 minutes or until you can flake it easily with a fork. While the fish is baking, heat a griddle pan over a medium-hot flame. Toss the vegetables in oil and cook them in the griddle pan until al dente. Turn them often so you can griddle pan marks all over them.

If you prefer your vegetables softer, you can parboil the baby carrots first. Serve the salmon with the vegetables on the side.
