Parsley Citrus Calamari

If you’re looking for something light and healthy for a warm evening, you have to try this. Calamari, or squid, is often battered or breaded and deep-fried but this method is just as good, perhaps better in fact, because we’re omitting the heaviness of the batter.

You will need fresh calamari (or thawed) to make this, along with citrus fruits, garlic, parsley and lemon juice. Simply toss everything together and then take your pick of the grill or stovetop cooking methods and you will be pleased to find this only takes a few minutes to cook! Never overcook squid because it can go rubbery.

This would be nice served with a salad on the side. Add fruit and nuts to the salad to make it more substantial if you want. This recipe makes 4 entrée-sized servings if you enjoy a salad or vegetable side dish with it too.

Ingredients:

2 lbs calamari tubes and tentacles
1 orange
1 lemon
1 lime
2 minced garlic cloves
2 tablespoons minced fresh parsley
3 tablespoons fresh lemon juice
1/4 cup olive oil
Sea salt and black pepper, to taste

Method:

Cut the calamari into thin rings and cut the orange, lemon and lime into slices. Put all the ingredients in a bowl and toss gently. Now you can either transfer the mixture from the bowl into a grilling basket and grill it over a medium heat, or use a skillet on the stove. Either method will take about 4 minutes.
