Warm Cherry Crumble

This delicious dessert is made with cherries, coconut milk and almond extract along with a crumbly, crispy topping made with different types of paleo-friendly flour, hemp seeds, cinnamon and more. Swap the cherries for apple, pear or another fruit if liked, depending what is in season. Use good quality organic fruit in here.

This is not a very sweet dessert, which is good news if you’re not into really sweet desserts, but if you prefer a little more sweetness in there feel free to add a tablespoon or two of raw honey or maple syrup to the cherry mixture to suit your palate better.

This is another dessert which will appeal to the youngest members of the family right up to the most senior. Everyone loves something fruity with a crispy topping. You can serve this warm or chilled, either by itself or topped with some paleo-friendly ice cream or similar.

Ingredients:

For the Filling:

3 cups sliced, pitted cherries
1/3 cup unsweetened coconut milk
2 teaspoons pure almond extract

For the Topping:

1/4 cup coconut flour
1/4 cup hemp seeds
1/4 cup almond flour
1/8 teaspoon sea salt
2 tablespoons coconut oil
1 teaspoon ground cinnamon
1 tablespoon water
Fresh mint sprigs, for garnish (optional)

Method:

Preheat the oven to 375 degrees F. Mix the cherries with the coconut milk and cherries, then pour this mixture into greased ramekins. This might be 4, 6 or 8, depending on the size of your ramekins, or you could even use one large ovenproof dish.

Now you can combine the remaining ingredients until crumbly, then sprinkle it over the cherry mixture. Bake for 20 minutes or until golden brown on top and piping hot in the center. Let these cool for a while before serving warm, perhaps garnished with a fresh mint sprig for a splash of color.
