Paleo Chocolate Chip Ice Cream

Who can survive the coming summer without a paleo dessert recipe for ice cream? Many paleo dieters love ice cream and this recipe assures that you won’t have to give it up.

Ice cream makes a lovely treat and this ice cream is the cream of the crop for paleo dessert recipes. It boasts plenty of sweetness and flavor appeal. Coconut cream and bananas are the main ingredients in this ice cream recipe, along with honey, chocolate chips and almonds. Expect a creamy, full taste from this delicious ice cream. An ice cream machine makes easy work of this recipe, but you can use a food processor instead to get everything mixed together, then simply freeze the ice cream until it is hard enough to eat. This ice cream makes a satisfying dessert after any kind of main course and it’s always delicious if you want to cool down.

Ingredients:

1 ½ cups of chilled full fat coconut cream
2 chopped bananas
½ cup raw chocolate chips (I used Enjoy Life)
¼ cup raw honey (Vegan Hack: replace honey with maple syrup)
1 tsp almond extract

Method:

Combine the coconut cream, bananas, honey and almond extract in a blender or food processor and pulse for approximately 2 minutes, or fully blended. Pour the mixture into a bowl, then add the chocolate chips and store in the freezer until firm. While you can make this using a food processeor, you can also use an ice cream maker, if desired. If using an ice-cream maker (I used the super low tech Zoku Ice Cream Maker), add the chocolate chips when the ice-cream is nearly ready instead.

  3. If using an ice-cream maker, add the chocolate chips when the ice-cream is nearly ready instead.
