Overnight Crockpot Oatmeal

During the summer I was all about my Blueberry Overnight Oatmeal, but now that it’s cold. I love waking up in the morning to hot oatmeal. I adapted this recipe from The Fitchen. It makes the whole house smell like hot apple pie! Please note that this recipe is adapted for a slow cooker this size. If you’re making this for more than two people, you should double the recipe.

Ingredients

  • 1 large apple, diced
  • 1 cups almond milk
  • 1  cups water
  • 1 cup steel cut oats*
  • 1 tablespoon brown sugar
  • 1 tablespoon agave
  • 1 tablespoon butter
  • 1 teaspoon cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1/4 teaspoon sea salt
  • ¼ cup raisins

Instructions

  1. Grease the inside of your crockpot with ½ tbsp butter
  2. Put everything but the raisins into the slow cooker
  3. Cook on low for 6 hours (depending on your cooker).
  4. When ready to eat switch to the warm setting on your cooker.
  5. Scoop out about a cup and top with raisins. Enjoy!

*Make sure you use steel cut oats with this recipe. This doesn’t work well with “regular” oats.
