INGREDIENTS:
800 gr. cleaned octopus
500 gr. potato
260 gr. leek
300 gr. tomato
40 ml. olive oil
4 sprigs of parsley
3 tablespoons lemon juice
PREPARATION:
Remove the octopus, if any eyes and beak.
Wash it, put it in a pan with 1 / 2 cup water, cook 45 minutes with a lid.
Wash potatoes well by rubbing the skin under the water.
Place in a saucepan, cover with water, bring to a boil and cook over low heat for 30 minutes.
Remove roots, green leaves and leeks to the outer membrane.
Cut into slices oblique.
Bake 10 minutes in a basket for steaming, covered and placed over a saucepan of boiling water.
Wash tomatoes, dry them, cut them into pieces.
Coarsely chop leaves 3 sprigs of parsley, washed and dried.
Drain the octopus and potatoes, cut the octopus into pieces of 2 cm ..
Peel the potatoes, cut into slices 1 / 2 inch thick.
Place in a salad of octopus, potatoes, tomatoes, leeks and stir well.
Whisk in a bowl the remaining oil, lemon juice and 2 tablespoons of warm water.
Sprinkle the sauce with the preparation obtained.
Sprinkle with chopped parsley and garnish with the whole leaves.
Serve.
