Nut-Free Pumpkin Energy Bites

Ingredients

  • 2 cups medjool dates, pitted (roughly 2 cups)
  • 2/3 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 2 cup rolled oats, divided
  • 1/2 cup pumpkin seeds, divided
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
  • 1/4 cup chocolate chips

Instructions

  1. In a large bowl, cover the dates with 2 cups of boiling water and allow to sit for 10 minutes.
  2. Remove dates from water, shaking off excess, and place in a food processor fitted with a steel blade.
  3. To the food processor add pumpkin puree, maple syrup, 1.5 cups of rolled oats, ¼ cup of pumpkin seeds, cinnamon, nutmeg and cloves.
  4. Process until smooth, scraping down sides and adding the remaining ½ cup of rolled oats, ¼ cup pumpkin seeds, and the chocolate chips. Pulse 5-10 times until mixed in evenly.
  5. Put the food processor in the fridge for at least 10 minutes before rolling into 1 tablespoon sized balls.

Recipe Notes

Store in a sealed container in the fridge for up to 1 week, or freeze in a plastic freezer bag for up to 2 months.
