Mission: Inspiration

I’ve been in a major food rut lately. It’s completely unlike me, but not only have I not been in the mood to cook, I haven’t really been excited about food for the past couple weeks.

The last thing I used a recipe for was this French toast, which was kind of a flop. I ended up having to broil it to try to crisp it up, but it still didn’t taste like the real thing. Does anyone have a good recipe for vegan french toast?

I’ve been making variations of cheesy toast most nights this week. Quick and easy, I’ve just been layering things like hummus, roasted peppers and Daiya cheese on bread and broiling it. Not exactly haute cuisine, but it gets the job done.

We’ve been out to eat at a few of the usual places, stopping for the raw sushi roll with walnut pate & seasonal julienne vegetables sushi roll, served with a jicama-carrot medley, topped with avocado at Peacefood

The seitan “crab cake” at Candle Cafe (which really tasted like the real thing)…

Sundays are great days to cook a bunch of things to eat throughout the week, so hopefully my foodspiration will return. If you have any fun new recipes you’ve stumbled upon, please do share! I need all the help I can get.
