Menu Plan Sunday April 28 – May 4, 2013

It’s Sunday again, time for a new menu. This week eating is going to be difficult. From Monday April 29 – Friday May 3 I am eating on only $1.50 a day for the Live Below the Line campaign to bring awareness to the extreme poverty felt by people around the world.

I have been talking to my two oldest about it and I think they are interested in joining in as well. I’m hesitant about allowing them, but I think they can handle it. I’ll just monitor them closely to make sure it doesn’t have a negative affect on them. It is after all for just 5 days. It could be a lesson well learned.

So $1.50 a day is difficult, but it’s made even more difficult by having to feed the rest of the family normally. Cooking food for them that I can’t eat was probably one of the hardest parts about last year. I’m hoping this year is better since I know what to expect.

Monica’s Menu For April 28 – May 4

Sunday: Grilled chicken breast with egg noodles and carrots.
Monday: Ziti and meatballs. I’ll just eat the ziti (wouldn’t eat meatballs anyways).
Tuesday: Hot dogs and hamburgers on the grill with pasta salad (I’ll eat a hot dog).
Wednesday: Chicken alfredo. I’ll eat just the pasta.
Thursday: Breakfast for dinner again, it’s cheap and hubby’s working.
Friday: Oven fried chicken with rice pilaff and corn. I can eat small portions of this because the chicken is only 99 cents a pound.
Saturday: Chicken parmigiana. It’s my favorite meal and I’ll get to eat normally again.

This is going to be a tough week. For the most part I’ll really only get to eat one meal a day and drink plenty of water. Will you join me and Live Below the Line?
