This is a fantastic party treat or just any time meal. These meatballs can be fried or baked either way its just delicious. The mushroom gives it amazing flavor and texture so be sure to try out this amazing recipe.
MEATLESS MEATBALL SLIDERS – Serves 16
Ingredients
- 2 Tbsp olive oil
- 1 pound brown mushrooms, finely chopped
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup bread crumbs
- 1/4 cup fresh parsley, finely chopped
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper, optional
- 1 tbsp dry red wine (optional)
- 1 can chickpeas, drained
- 1 cup marinara sauce ( recipe below)
Directions
Heat olive oil in a large pan over medium to high heat. Add the mushrooms and sprinkle with salt. When the mushrooms have browned add in the onion and cook until the onions are translucent. Add in the wine and cook for 1 minute. Remove from heat and stir in the garlic.
Transfer the mushroom mixture into a bowl, Stir in the breadcrumbs, parsley, oregano, cayenne pepper, salt and pepper. Let sit overnight in the fridge so all the ingredients blend together.
After its rest, mash in the chickpeas until blended well.
Form meatballs.
Preheat oven to 450 F. Grease a baking sheet and place the meatballs on the baking sheet. Bake the meatballs for 15 -20 minute turning them halfway. You can also fry the meatballs in oil they hold up perfectly.
Marinara Sauce
Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can crushed tomatoes
- 1/2 cup dry red wine
- 1 tbsp fresh parsley, minced
- 1 carrot, grated
- 1 tsp salt
- 1/2 tsp black pepper
Directions
Heat olive oil in a large pan. Add the onion and sauté over medium heat. Add in the garlic and cook for 1 minute. Add in the wine, scraping all the onion pieces from the pan, cook for 3 minutes (don’t worry the wine does evaporate). Stir in the tomatoes, carrot, parsley, salt and pepper. Cover and let simmer for 10 minutes.
ASSEMBLE
- 12 slider buns
- marinara sauce
- meatballs
- vegan cheese – optional ( its flavourful enough for me)
Place a meatball in the center of the bun.
Top a tbsp of marinara sauce over the meatball.
Cover with cheese and enjoy.
