Mandarin Orange Bundt Cake

Ingredients:

Strusel
4 teaspoons chinese five spice powder
6 tablespoons all purpose flour
6 tablespoons Dixie Crystals Dark Brown sugar
6 tablespoons Dixie Crystal Granulated sugar
Cake
5 medium clementines
1 1/4 cup butter
4 large eggs
1 tablespoon Nielsen-Massey Vanilla Extract
1 cup Dixie Crystals granulated sugar
1 1/2 cups all purpose flour
1 tablespoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
8 tablespoons Dixie Crystals Powdered sugar

Directions:

Preheat oven to 350 degrees.
Spray bundt pan with cooking spray.
Combine 5 spice powder, flour and both sugars in a small bowl. Set aside
Add clementines to a food processor and process until smooth with a bit of chunks.
Measure out 1 1/2 cups of orange mixture and add to the mixer. Add butter, eggs, and vanilla. Mix until combined about 4 minutes.
In a large bowl combine sugar, flour, baking soda, baking powder and salt. Add the dry ingredients to the wet. Mix until combined, 3-4 minutes.
Transfer half the batter to the bundt pan and smooth out. Sprinkle half the strudel topping over the batter. Transfer the remaining batter to the pan and sprinkle the remaining strudel to the top of the batter.
Bake in the oven one hour or until wooden skewer or toothpick inserted it the center of the cake comes out clean.
For the glaze:
Take the remaining orange mixture and squeeze the juice out with a fine mesh strainer or cheesecloth.
whisk powdered sugar and juice together to form the consistency that you like your icing to be. Allow the cake to cool at leat 25-30 minutes before inverting and drizzling icing over the top.
