Low Country Boil for Saint Peter

This Low Country Boil is a Southern Summertime Staple here in Virginia. Why heat up the house if you don’t have to?

Today is the Feast of Saint Peter. It would be fitting to serve something from the sea on his feast day. I thought a Low Country Boil would be perfect.

Did you know that Peters original name was Simon? Christ gave him the name Peter. In Hebrew it was translated to mean “the rock”. Peter who was a fisherman by trade was introduced to Christ by his brother Andrew. He soon became a fisher of men.

From the earliest days of the Church, Peter was recognized as the Prince of the Apostles. Here are a few other things you may not have known about Peter.

  • He was the first to perform miracles in the name of the Lord.
  • He denied Christ three times as predicted by the Lord.
  • He was the first to bring the gospel to the Gentiles.
  • The first appearance of the risen Christ was before Peter.

Peter was crucified around 64 AD. He declared himself unworthy to die in the same manner as Christ so he was crucified upside down.

The abundance of seafood makes this dish a summertime favorite and perfect for the feast of Saint Peter.

Living along the Chesapeake Bay has its perks.

The Low Country boil is the South’s equivalent to the Northern Clambake.

This seafood dish is usually a combination of shrimp, sausage corn and potatoes.

You can serve this Low Country boil on newspaper to make things easier when it comes to clean up. Crab, Lobster and Crayfish  are frequent additions to the pot, depending on what part of the country you are in.

Low Country Boil

Ingredients:

5 quarts water
3/4 cup Old Bay Seasoning
12 medium red potatoes
6 smokes sausage links cut in half
6 ears corn cut in half
3 pounds shrimp unpeeled

Directions:

Fll a large stock pot with the water and add the seasonings. Bring to a boil. When boiling add the potatoes and sausage. Cook for 20 minutes. Add the corn and cook for another 10 minutes. Add shrimp and other seafood. Cook for 3 minutes. Drain on Newspaper and sprinkle with a bit more seasoning. Serve with bread, melted butter and cocktail sauce.
