Let’s Get Batty

Soooo, funny story – these cookies were supposed to be simple bat shaped Oreo cookies. But then the $1 cookie cutter from Target churned out skinny bat wings that required surgical precision when moving the dough to the baking tray. And then the cookies came out way too thick to sandwich together. Which wasn’t a problem since none of them even came close to matching up perfectly. How is this physically possible when one cutter was used in the entire process?! Halloween trickery is in the air…

In the end, I salvaged my big fat fail by outlining & filling out the bats with a tube of black sparkle gel and threw in some candy eyeballs for good measure. By some small miracle, they actually turned out pretty darn cute (as Twilight has proven, sparkly vampires are hard to resist), so I thought I would share this silly kitchen disaster with you :-) I’ll be better off buying my Oreos from now on, but those of you with better baking skills should check out the homemade Oreos recipe from My Kitchen Addiction – they look scrumptious!

Chocolate wafer cookies (from My Kitchen Addiction)

2 sticks unsalted butter, softened
1 cup sugar
1 egg
1 tsp vanilla extract
2 cups all purpose flour
3/4 cup dutch process cocoa powder
1 1/2 tsps baking powder
1 tsp salt

1. Beat the butter and sugar in a large mixing bowl until light and fluffy. Add the egg and vanilla and mix together

2. In a large bowl, whisk together the flour, cocoa, baking powder, and salt. Gradually add the dry mixture to the cream mixture until incorporated

3. Divide the dough in half, and shape into two discs. Wrap in plastic wrap and chill in fridge for an hour.

4. Roll out the dough, one disc at a time, on a lightly floured surface to 1/8 – 1/4 inch thickness. Use a cookie cutter to cut out the cookies and transfer them to a Silpat-lined baking sheet.

5. Bake for 12 minutes at 350°F, then transfer cookies to a wire rack to cool.
