Lentil, Kale and Sausage One Pot Meal (Dairy, Gluten and Sugar Free)

I have made this dish a few times now and love it.  It has lots of flavor and eats like a full meal.  Do ensure you understand all the ingredients in your smoked sausage as there is often additives etc. in sausage. This is a very hearty dish which I look forward to making more in the winter.  Yum!
Lentil, Kale and Sausage One Pot Meal (Dairy, Gluten and Sugar Free) Ingredients (serves 3-4 people)
  • 1 tablespoon olive oil
  • 1 small diced onion
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam marsala
  • 1 1/2 cup red lentils
  • 2 1/2 cup water
  • 2 chopped smoked sausage
  • 1 diced tomato
  • 1 cup chopped kale

Directions
  1. In a large frying pan heat oil.
  2. Fry onion for 3 minutes until translucent.  Add cayenne, turmeric and garam marsala and heat for 1 minute, stirring to bring out flavours.
  3. Add water, lentils, sausage and tomato.  Cook on medium heat for 10 minutes, add kale and simmer for another 5 minutes until lentils are soft.
  4. Serve.
