Lemon Fish and Fitness!

You guys were all so kind to comment on how fun my morning oatmeal looked. I love getting all your comments because you are all so darn inspiring! I know I wouldn’t still be eating clean and healthy without all your encouragement.

Today something magical happened…

Lunch

My Dad randomly popped up from his desk and said “would you like to splurge today for lunch?”… this left me speechless. A splurge?? Today?? Right now??? HECK YES I WOULD!!!!

In-N-Out Burger! 

I definitely wanted to get my fill of in-n-out but I didn’t want to start off the work week with a whole splurged meal so… I compromised. I decided, after a quick tweet up with @themexigarian that I would skip the hamburger bun and go for the french fries!!! She’s so smart.

I had the #3, which is a hamburger and french fries with a drink. I had my burger protein style (wrapped in lettuce) with ketchup & mustard, tomato, onion and pickles. I gave about a third of my fries to my pops and I had an iced tea to drink.

This whole meal turned out to be 510 calories. I didn’t save any sugar grams by skipping the secret sauce but I did get more vitamin C & A and I had 9 less grams of fat!!! That’s one health-fied meal if I do say so myself.

I had a pretty good sized sugar craving around 2pm so I decided to give in, but only if I could have dark chocolate!!! Dark chocolate is actually good for you. It has antioxidants in it when consumed without milk. I guess milk blocks the body’s ability to absorb the antioxidants. STRANGE!!

It’s so crazy. Since cutting most sugars out of my diet, especially those that affect blood sugar levels I crash after having sweets. I was a major zombie the last hour at work this afternoon.

Today I had a 30 minute treadmill run on the calendar. I took it pretty easy yesterday since I only ran 1 mile to start off the Runner’s World Running Streak, so I added a 30 minute Cybex elliptical workout to the schedule.

And for a little strength training I did the Nike Training Club: Cardio Killer 15 minute circuit.

Holy moly I was a shakin’. Since I did so much cardio today, I only did the circuit once through but there’s the whole thing incase you want to do it.

You don’t need any equipment for this workout. Here’s what ya do…

  • 1 min alternating froggers
  • 1 min burpees
  • 30 sec squat hold
  • 30 sec squat jumps
  • 1 min 2 feet plank side hops
  • 30 sec tuck jumps
  • 30 seconds RECOVERY

do the whole list twice and call it a workout!

Dinner: Lemon and Veggie Baked Fish!

Luckily for me Max came in to help me make this delicious dish because I was 9 ways of BEAT after my massive workout. I think my fitness eyes were bigger than my sweating stomach this afternoon.

The recipe is really easy and takes about 30 minutes from start to finish. I was inspired by a recipe found on Real Simple, but as usual I had to adapt it to what was in my fridge.

Serves: 3-4

Cook/Prep time: 40 minutes

Ingredients:

  • 2 small gold potatoes
  • 2 small zucchini squash
  • 1/2 bunch of asparagus
  • 2 scallions, diced
  • 2 TBSP olive oil
  • pinch salt
  • pinch pepper
  • 6 tilapia fillets (defrosted or thawed)
  • 2 small lemons
  • kalamata olives
  • fresh thyme

Directions

  1. Pre heat the oven to 450 degrees. Thinly slice the potatoes, zucchini, scallions and lemon.
  2. In a casserole dish spread zucchini and potato slices until they make an even layer over the bottom of the dish. Lay the asparagus shoots over the layer. Drizzle olive oil over the veggies and sprinkle salt and pepper to taste over the mixture. Bake in the oven for 15 minutes
  3. Remove dish from oven and lay fillets over the veggies. Top the fillets with lemon slices and more pepper. Add kalamata olives and scallions (as much as you’d like). Then place about 10 sprigs of thyme over the fish and veggies. Put the dish back in the oven and cover for 10 more minutes.

Max was in charge of doing a small grocery stop on the way to my house. He found these really fun kalamata olives to use and they were delicious. We kept stealing samples while cooking. They go really well with white wine…

I made my plate with a heaping serving of veggies and one fillet. And we enjoyed 2 glasses of wine, 1 while cooking and 1 while eating.

I can’t believe how gourmet this dish is since it was so easy to make and dirtied almost no dishes. Just a knife, a cutting board and a plate.
