LCHF Breakfast by Fanny #3 – Avocado Eggs with Bacon Sails

What do you eat for breakfast on LCHF? It's a common question and here's another excellent suggestion.

This is the third breakfast idea from Fanny Lindkvist, who runs a popular Swedish blog and the Instagram account LessCarbs (now at 12K followers and growing quickly).

Avocado Eggs with Bacon Sails

This is a fun breakfast for the eye and good for the stomach. It's appreciated by both mature and young people. Great for the weekend when you have a little bit more time in the morning.

Ingredients (per serving)
LCHF Breakfast by Fanny #3 – Avocado Eggs with Bacon Sails

● 2 hard-boiled eggs
● ½ avocado
● 1 teaspoon olive oil
● ¼ package bacon
● Salt and pepper to taste

Instructions

Hard boil the eggs, let cool and split the eggs as if for deviled eggs. Scoop out the yolk and mash with the avocado, oil and salt and pepper to taste. Bake the bacon until crispy in the oven for 5-7 minutes at 350°F (180°C) or in a frying pan. Put the paste back into the egg and set the bacon sail!
