Kentucky Derby Pie for National Pi Day

Welcome to Pi(e) Day hosted by Terri from Love and Confections! Pi Day is celebrated every March 14 by math fans around the world – and also bakers and pastry chefs. Pi is an non-repeating, infinite number represented by the Greek letter π, and used to represent the ratio of the circumference of a circle to its diameter. Today, March 14, 2015, is an extra special Pi Day, because at 9:26:53 AM it creates the “Pi Moment of the Century”. The first ten digits of Pi are 3.141592653 (3/14/15, 9:26 AM and 53 seconds). This exact date and time happens once every hundred years – a once in a lifetime moment for most of us. How cool is that? Today, 20 Food Bloggers have gathered and want to celebrate the fun of Pi by creating their own sweet and savory pies to share with you. Hope you have a delicious day!

Kentucky Derby Pie for National Pi Day – Kellis Kitchen

Guess what today is? It’s one of those most wonderful days of the year! It’s Pi Day. I know, Pi is Greek word for the circumference of a circle. I assume Pie came from the word Pi – and so since I cannot possibly tell you about 3.1415….. I will tell you about how I and about 20 other bloggers love PIE! At the bottom of the post are a list with links to all the participating bloggers and the scrumptious pies they have prepared. I have made Kentucky Derby Pie because soon it will be time for the Kentucky Derby and at about the same time, the series finale for one of my all-time favorite shows which is set in Kentucky – it is called Justified and I will miss it greatly! Anyway, this is my homage to both.

Ingredients:

3 Extra large eggs
2 Tablespoons oil
1 Tablespoon Bourbon Whiskey
1 teaspoon of vanilla extract
¾ All-Purpose Flour
¾ Cup White Sugar
¾ Cup packed Brown Sugar
1 1/8 Cup unsalted Butter, soft
12 ounces chocolate chips
1 nine-inch unbaked pie shell

Directions:

Preheat oven to 325F
Beat eggs in a large mixing bowl until foamy (it’s about 3 minutes), add oil, vanilla, and whiskey just until incorporated.
In separate bowl whisk flour and both sugars together then beat into the egg mixture then add butter and incorporate all.
Gently stir in chocolate chips by hand.
Pour mixture into the unbaked pie shell (that is in an accommodating pie dish).

Bake for about an hour – or until a sharp knife comes out of the center of pie clean.
If your crust starts to get too brown, put some foil around the crust so it won’t burn.

Set dish on a wire rack and allow to completely cool before serving.
