It may not look to pretty but this is what we call a “cupboard” meal. Everything for the meal came from the freezer, cupboard, and odds-ends from the refrigerator. This roasted pork loin, baked sweet potato slices, and lemon parsley rice came together quick and cost about $2.25 per person.
