I Hate Beets

I think the reason that I thought I hated beets is because it reminds me of a stupid three day diet I tried in high school – does anyone else remember that one? It was a diet that claimed you could lose 10 pounds in 3 days if you followed this ridiculous diet. Some of the things that you had to eat was beets, plain tuna, saltine crackers, hot dogs and for a special treat you could have 1/2 cup of vanilla ice cream – pretty stupid!!

But lately I’ve been dusting off my juicer and putting it to use. I asked for it last year for Mother’s Day and in the beginning I was thinking “I’m going to juice every day!” But then the novelty wears off, and I was like “it takes so long to clean it afterwards” and I just stopped.

But on Pinterest the other day I saw a picture of a juice called Purple Passion. I wish I would have pinned it – but I couldn’t find it again. The color of the juice looked amazing. Fast forward a few days and my Mom asked if I wanted anything from the farmers market by her house – I immediately said “Can you pick me up some beets?”

There are some awesome recipes out there. My favorite would be Fully Raw Kristina.

I’ve been thinking – is it easier to take 5 minutes to clean off my juicer to get the benefits or is it easier down the road to spend that time in Dr. offices, or paying lots of money on medicine because I’m sick. So I’m going to be juicing A LOT from now on. I have a twin sister who is diabetic and a brother who had cancer last year, so I should consider myself lucky and try to keep getting healthier!!

Turns out – I LOVE beets!!! And I love juicing beets.

Ingredients

  • 1 beet
  • 2 apples
  • 4 carrots

Instructions

  1. For this recipe, all I did was wash all the vegetables really well. I don't peel the beet, or take the stems off, I don't even cut the ends off of the carrots - just throw everything in!

Juicing is another way to clean out your fridge at the end of the week. A little spinach left over, and orange, apples, carrots, zucchini, celery, cucumbers, lemons, limes, etc…the sky is the limit!

Tonight I made a pitcher that included:

1 cucumber
1 beet
8 carrots
4 apples
1 hami melon*
1 cup blueberries
bunch of kale

This was a gorgeous purple color when I was done. So delicious and refreshing!!!

You may be asking “what is a hami melon?”

When I was at the store over the weekend (Meijer in the Chicago area) I saw these melons that I had never heard of so I had to get one. It’s kind of a cantaloupe, but the size is more like a football and the skin is lighter. The flesh of the inside is lighter too than a cantaloupe and it’s not quite as sweet. I loved it!

I also got another fruit which was awesome – a honeylope! A cross between a cantaloupe and honeydew melon – very sweet, very juicy and wonderful!

Do you like to juice? What are your favorite things to juice – or what kind of juicer do you have? I have the Jack La Lane Power Juicer. It really works well and it doesn’t take a lot of work to clean it off. I don’t have a dishwasher, but if you did, you can put all the parts in the dishwasher making cleanup even easier!
