I Can't Believe It's a Waldorf Salad

By Smilinglikesunshine @smilinglikesuns
It's quite rainy and grey here today. Let's brighten up our day with this crunchy and yummy salad. This is one of my favorite recipes and I came across it at Detox Your World a few years ago. Now I don't have the original recipe and so the quantities I use are not the ones on the book, but this is a salad and you can't go wrong, can you?
Ingredients:
2 apples
3 celery stalks
half of a long cucumber (quartered lengthwise)
3 handfuls of macademia nuts
1-2 cloves of garlic (depending on your taste)
a handful of raisins
Chop the apples into tiny bits  and two of the clery stalks finely. Put the remaing celery stalk, cucumbers, garlic and macademia nuts in a kitchen robot, whizz and make a sauce. Mix with apples, celery stalks and raisins. Voila! Very tasty and healthy! A different and vegan version of the classic Waldorf salad. Makes a nice side dish or a packed lunch if you add a few rice cakes on the side. If you omit the garlic, the kids love it,too!
