Holy Burrito

Holy Burrito
There is nothing better to warm your belly on a cold Dunedin night than a burrito. These are my go-to meals when I have no time and minimal ingredients. And of course, for those nights when I want some tasty mexican. I have a couple of variations on this dish...
Beef Burrito:
I saute a diced onion, a couple of gloves of garlic and some dried chilli flakes (amount is dependent on how hot you want it, I use about a teaspoon). Add 300 grams or so of mince and brown. I then add taco seasoning and a can of mexican beans and fry the mix for 5-10 minutes. I like the taco seasoning better than the burrito seasoning, it's tastier. Once combined, I add a can of Mexican tomatoes (if you just have a can of regular Italian tomatoes, that will be fine). I throw a bit of smoked paprika in the mix, because I love it. Simmer for 15 minutes.
Spoon some of the mixture along the middle of a soft tortilla and sprinkle some tasty cheese over. Roll, and stack side by side in a large baking dish. Bake at 180 degrees Celsius for about 15 minutes, or until the edges of the burrito start to brown. Serve topped with a huge dollop of sour cream and salsa.
Chicken Burrito: 
Again, saute a diced onion, a couple of gloves of garlic and some dried chilli flakes. Add a couple of large, diced breasts of chicken into the pan and brown. Add a sprinkle of smokey paprika to the chicken and stir through. Add a little burrito mix now if you have it. Throw in two tins of tomatoes and simmer for about 15 minutes, or until the mix is thicker. I add a teaspoon of sugar here as I like my mix a little sweeter. Add a quarter cup of cooking cream and stir through.
As with the beef burritos, spoon some of the mixture along the middle of a soft tortilla and sprinkle some tasty cheese over. Roll, and stack side by side in a large baking dish. Bake at 180 degrees Celsius for about 15 minutes, or until the edges of the burrito just start to brown. And again, you have to serve topped with a huge dollop of sour cream and salsa.  Or there is something wrong with you (unless you are lactose intolerant...sorry about that).
