High Level IPA – Alley Kat Brewing

By Mike @mikescraftbeer

From Edmonton, Alberta's Alley Kat Brewing Company comes their second beer in their Back Alley Brews series the "High Level IPA". The beer pours a orange colour with a white head. The aroma consists of orange, tropical fruits, caramel and floral hops. The flavour is of orange, mango, pineapple and some other tropical fruits with caramel and maybe some bready malts that finishes with a herbal hops bitterness. The beer has an alcohol content of 6.2% with an IBU of 52. The hop bursting technique used makes for an interesting flavour although it comes in more as an English IPA.

Commercial Description: uckets full of El Dorado, Mandarina Bavaria, and Jarrylo hops were thrown into this hop bursted IPA. A smooth bitterness makes way for fruity hop flavours and aromas of mango, orange, tangerine, pineapple, and pear. Hop Bursting is a brewing technique where you add all of the hops near the end of the brewing process, but don't allow them to boil for very long. This allows the intense flavours of the hops to come through with a smooth bitterness that doesn't overpower. The result here is a juicy IPA, 'bursting' with flavour.
