Take advantage of the last of the warm weather with a menu packed with healthy dinners. Grilled teriyaki chicken and steak Marsala, peanut noodles and rainbow sushi. Then for dessert, how about frozen chocolate raspberry pie.

Before I wrote my latest meal plan, I quizzed Mr Grumpy and The Princess as to whether there were any dishes they would like included. The Princess reeled off a string of meals she wanted to eat, so my winter menu plan this week is full of easy dishes that are guaranteed to please even the fussiest teenager.

Our summer menu is packed with healthy dinners that take full advantage of the last of the warm weather. Grilled teriyaki chicken and steak marsala, peanut noodles and rainbow sushi. Then for dessert we have a great make-ahead frozen chocolate raspberry pie. Enjoy!

Winter Meal Plan

Tuesday: Easy Weeknight Roast Chicken, served with Easy Baked Sweet Potato Chips and Turnip Tartiflette.

Wednesday: Speedy Minestrone Soup, served with Parsnip & Thyme Bread.

Thursday: Thai Red Beef Curry, served with steamed rice.
