Healthy Oatmeal Blueberry Muffins

Trying to get my 3yr old grandson to eat any anything healthy, is like – well I’m sure many of you know.  It’s darn near impossible.

So imagine my surprise when he wolfed down one of these Healthy Oatmeal Blueberry Muffins.

Healthy in that I used 1 full cup of oat flour instead of all-purpose, and I used applesauce in place of any eggs or oil.

  • Sweet
  • Moist
  • Full of healthy ingredients like applesauce. oatmeal, and blueberries….

By golly , I think we have a winner.

So when you’re craving that sweet treat, or just want something a little different for breakfast…  Or like me you’re trying to get the impossible toddler to eat something healthy….

Give these babies a try.  I think you’ll like them.

Healthy Oatmeal Blueberry Muffins

Oat flour is pretty expensive in the grocery store.

So make your own.

All I did is take an old coffee grinder, and ground up regular old-fashioned oats into a fine flour.  Easy, quick, and TONS cheaper than buying a store-bought bag.

I just ground up little by little until I had a full level cup of flour.

Then just mix in the other dry ingredients in one bowl, the wet ingredients in another, and combine the two.

Fast and Easy.

Fold in your blueberries at the end and  you’ve got enough batter for 12 yummy oatmeal blueberry muffins.

Use paper muffin cups to avoid using any spray or oil.

Bake for about 20 minutes at 350 degrees.

Mmmm……muffins.  And healthy muffins at that.

Healthy Oatmeal Blueberry Muffins
These Healthy Oatmeal Blueberry Muffins are guilt-free treats. Made from oat flour, applesauce, and blueberries - these muffins are fat free, 100% vegan, and super yummy. Ingredients
  • 1 cup oat flour
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup + 1 Tbls unsweetened applesauce
  • 2 Tbls maple syrup
  • ¾ cup blueberries
Instructions
  1. Mix all dry ingredients in a large mixing bowl
  2. Mix the wet ingredients in another smaller bowl
  3. Combine the wet and the dry and mix until combined
  4. Fold in blueberries
  5. Use muffin paper cups to avoid using any spray or oil
  6. Use a tablespoon to drop level spoonfuls into a muffin pan
  7. Fill each cup at least ¾ full.
  8. Bake at 350 degrees for 20 min
