Guest Post: Delicious Summer Broccoli Guacamole by Sara Upton

OH the joys of summer and running a bakery! Finding time to juggle breathing, living, working, blogging is becoming more difficult with each passing day. So, I without any further delay I’ll get into this A+mazing guest post by the ever so gracious (and patient) Sara Upton.

Ah yes, summer. For these next few months we’re all ready to bask in the sunshine, relish in the breeze that cuts through the rays, and figure out exactly how to complement it all with the right meal. Personally, I’ve been digging through the web for different ideas for my own summer meal schedule, which so far has been dominated by bright and beautiful fruits and vegetables. As much as I’ve been enjoying those, and will continue to, I’ve also been trying to mix it up.
That’s led me to numerous new resources that I didn’t know existed previous to my research. While the borderline-cliche phrase “there’s an app for that” might make you think that, indeed, there is an app for everything, I was somewhat-ignorant to the fact of just how true that statement was. For instance, I recently stumbled upon this post at Verizon Wireless that’s brimming with apps related to healthy eating, namely of the vegan and gluten-free variety. Hello,  nice to meet you, apps, especially Vegan Recipes!, which houses more than 200 recipes.
But for this particular post, I’m going to focus on a trio of killer recipes I’ve found from browsing the ‘net for tasty summertime options. And let me tell you, if none of these is appealing to you, we may need to have a serious talk. Or you just need to give it a try and see for yourself.

As a huge fan of all things guacamole, I’ve been trying to mix it up so that I’m not always eating the same thing every single time I grab a bag of my favorite tortilla chips. With that in mind, you can probably imagine my excitement in finding this broccoli-rich take on the dip at Vegangela. She decided to throw the broccoli into her guac as a means of having more of the particular green vegetable in her diet. Personally, I love broccoli and eat it pretty frequently but I <em>love</em> it in this version of guacamole, especially the texture it adds.This takes about only 10 minutes to make and will probably be gone in half the time.

2 ripe avocados, diced
¾ cup raw broccoli pieces (no stems) – finely chopped so it’s virtually unrecognizable
1 tomato, diced
¼ cup red onion, minced
1 garlic clove
1 tbsp lemon juice
Handful of fresh coriander (cilantro), chopped – optional
Salt
Directions
1.    Mix all the ingredients except the avocados.
2.    Add the avocados but just gently fold them in so that there are still some chunks.
3.    Season with salt, as needed.
