Greek Chicken with Orzo

Every time I think about our trip to Greece a few years ago I remember how incredible the food was. Delicious wine, feta cheese, amazing seasonings like oregano and all of the history. With my serious case of wanderlust I have so many places I want to see but we will visit Greece again! One of the things that I brought back with us was a delicious seasoning mix. I know it has oregano and marjoram but since it’s written in Greek I can’t tell everything that’s in it. I have rationed it out and am down to my last few tablespoons but it was worth it for this dish. Since you probably don’t have a super special seasoning blend from Greece I highly recommend finding a good Greek mixture from Penzey’s or a high quality spice shop.

Bridget, Ben, and their kids Alex and Grace were over for dinner and games one night and Alex is turning into quite the little chef. We helped me make this delicious dish, Brussels sprouts and a big salad. Any way to get the kids in the kitchen helping you  make delicious and healthy meals is a good thing in my mind.

Juicy pieces of chicken served over orzo filled with black olives, tomatoes and feta. It really did take me right back to Greece. It’s full of flavor and seriously tasty. I enjoyed the leftovers for my lunches and would make just the orzo as a side. It would be perfect for entertaining!

This was a big hit with everyone and I know I will be making variations of it again. I’m thinking grilled chicken would be perfect in the summer.

  • 1lb chicken breasts or tenders
  • 1tbsp Greek seasoning blend (or oregano)
  • 1 tbsp olive oil
  • 1 glove garlic, minced
  • ½ tsp red pepper flakes
  • 2 14 ounce cans diced tomatoes (fire roasted is great in this)
  • 1½ cups orzo (whole wheat if you can find it)
  • ¼ cup black olives, diced
  • Salt/Pepper
  • 2 ounces feta cheese
Instructions
  1. Heat olive oil in a large skillet over medium to high heat.
  2. Top chicken with seasoning blend and salt/pepper. Cook chicken 2-3 minutes per side, or until cooked through.
  3. Remove chicken and set aside.
  4. In that same skillet, bring 2 cups water and tomatoes to a boil. Add in red pepper flakes, garlic and orzo.
  5. Cook for 8-12 minutes or until orzo is cooked through and all the liquid is absorbed.
  6. Add in olives, salt/pepper and feta cheese. Top with the cooked chicken and serve.
