Greek Chicken & Roasted Veggie Wraps

Ingredients

Roasted Chicken & Veggies

  • 1 chicken breast (7 oz), chopped into 1 inch pieces
  • 1 small zucchini, cut into 1 inch pieces
  • 1 bell pepper, cut into 1 inch pieces
  • 1/2 red onion, cut into 1 inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 lemon sliced

Other

  • 2 tablespoons feta cheese, crumbled
  • 2 large flour tortillas or wraps

Instructions

    Roasted Chicken & Veggies

    1. Heat oven to 425°F.
    2. In a large bowl, toss together the chicken, zucchini, bell pepper, red onion, olive oil, oregano, basil, garlic powder, onion powder and salt.
    3. Spread out on a baking sheet, tucking lemon slices underneath.
    4. Bake for 15 minutes.
    5. Allow to cool slightly before dividing between two 2 cup storage containers. Sprinkle with feta cheese.

    Storage:

    1. Store in the fridge for up to 4 days.

    To Serve:

    1. Heat in the microwave until heated through.
    2. Spoon into tortilla or wrap, and enjoy.
