Grain-free Muffins, Pancakes, and Brownies!

Did I mention my husband is HOME?!  Over the past month, he was only home for 4 days…so to say that it has been a difficult month is an understatement.  It was a delicate balance between taking care of our home and boys, while not overdoing it, trying to keep this little girl tucked away until 37 weeks.

He was most recently in Honduras, playing at a huge soccer arena, he said it was a pretty awesome experience, but I’m really glad to have him home!

Here’s to hoping that our little girl will be born sooner than later before he has to leave again!

So, I’m back on the paleo wagon.  We’ve dabbled in it for a few years, and even though I don’t find that any of us are specifically gluten intolerant, we all do just feel better with getting most grains out of our diets.  I’m not being super strict.  We still do quinoa (which is actually a seed), a little bit of soaked oats, and probably some rice here and there.

Oh, and I can’t imagine ever giving up raw dairy, so we will still have that as well.

Anyhow, I’ve become obsessed with a few of my favorite grain-free recipes and wanted to share them!  Just click each picture to be linked to the recipe!

You guys, I’ve made these at least 6 times in the past month.  I always double the recipe intending to freeze some for later, but they get scarfed up before I have the chance!  I always add blueberries, because we love them, and I use a bit less honey than the recipe calls for.  They are awesome, and perfect for an easy breakfast.

I didn’t have any cooked sweet potato so I used come pumpkin I had on hand – delicious!  I added all the spices he recommended (cinnamon, nutmeg & clove) and they were reminiscent of a cinnamon roll, my ultimate weakness.

Last, i’ve blogged about these before, but if you are having a serious chocolate craving, these will fit the bill!

Raw Brownie Bites

They are a dessert favorite in our home and give you a serious energy boost!  I use organic cocoa powder instead of carob and chia instead of hemp, and like to roll them in flakes of coconut for easier handling!
