I don't know about you but the one thing I can barely pass by in the grocery is a rotisserie chicken; especially if I'm at Costco where they're always just freshly roasted. I can't even remember the last time I roasted a chicken because these are just to easy to buy and so easy to use. I seldom buy one for a full meal either. I might have a small dinner with a thigh piece the night I bring one home but for me the reason I cannot walk on by is because I just LOVE homemade chicken salad and they make pulling one together like this Gorgonzola Chicken Salad Sandwich with Grapes and Walnuts so easy.
I have to give Sprouts some credit for the idea. They are the only place I shop that has deli foods I will buy. Something about thy way they prepare their food that appeals to me. No fillers, no relish, not overdone with eggs or other condiments. What I buy there tastes much like what I would make at home and trust me, every single time I pickup a small carton of prepared food the phrase, 'I could make this at home so much cheaper.' always is on my mind. And I can. So I do.
To be honest I don't know for sure if I bought a chicken salad with Gorgonzola cheese from them or if this came about because I love their Potato Salad with Gorgonzola Cheese and this was my riff on that but I do know it's now my favorite. I love, love, love Gorgonzola cheese; I call it Blue Cheese Light. It's got plenty of flavor but still is milder than a straight blue cheese so it's the one that always ends up in my basket. Not a fan of Gorgonzola? I love this recipe from Marshall Field's too; some similar components without the blue cheesy bite!
I love using croissants when serving this for a crowd so check those out at Costco too. None in the house? Simply toast some sandwich bread and improvise! This would be a fantastic dish to serve to a crowd and with the Super Bowl coming up; one that is a change from some of the heavier fare we are too often stuck with at big game day parties. My team isn't going to be anywhere near a Super Bowl this year (but last year...GO Broncos!); still, I enjoy the game day revelry and it's a time for friends to come over and I'll serve these and a great cocktail. Who needs football?

Ingredients
- 4 cups cooked chicken, chopped
- 1 cup red grapes, halved
- 1/2 cup celery, chopped
- 2 Tbsp green onions, chopped
- 1/2 cup Gorgonzola cheese, crumbled
- 1/2 cup mayonnaise
- 1/4 cup yogurt
- 2 tsp sugar
- 1 tsp salt
- 1/2 cup walnuts, chopped and toasted
- Iceberg or Green Leaf Lettuce
- 8 croissants, sliced in half
Instructions
- In a medium bowl, add chopped chicken, grapes, celery, green onion, Gorgonzola, mayonnaise, yogurt, sugar and salt. Mix gently to combine thoroughly.
- Fold in the toasted walnuts.
- Serve with lettuce on a croissant.
