Gluten Free Product Review: Bob’s Red Mill Muesli

muesliAs you know Bob’s Red Mill is one of my favorite gluten free brands. So it came as no surprise that I fell in love with their Muesli hot cereal upon first taste. A mix of thick rolled oats, dried fruits and seeds this hot cereal is more than A+mazing. According to my research muesli was developed around 1900 by Swiss physician Maximilian Bircher-Benner for patients in his hospital. Leave it to Bob’s to “glutenfreeify the recipe and make this wonderful hot cereal mix available for us celiacs.

This muesli is chock full of brown rice crisps, raisins, dried apples and cranberries, sunflower seeds, almonds, roasted soy beans, pumpkin seeds and coconut flakes. It is inherently sweet so there is no need to add too much additional sugar. I only needed about 5 drops of liquid stevia + a little almond milk and my hot muesli was complete. Muesli is not only tasty but it is loaded with complex carbs, B-complex vitamins, iron and cholesterol-fighting soluble fiber. All the good stuff that doesn’t spike your blood sugar in 2 seconds and does your body good. Try soaking yours overnight to make it extra creamy in the morning and top with fresh fruit. Or simply layer 2 cups on a cookie sheet, toast for 20 minutes, and serve it granola style over yogurt. However, you decide to eat this muesli you won’t be disappointed.
