Gluten Free and Dairy Free Flapjack | Recipe

I have another recipe for you today, I’m bringing you some slightly healthier gluten free and dairy free flapjacks. The basic recipe I used was this one from Tesco Real Food but I made some changes which you can see below.

I’m on a bit of a health food kick at the moment and want to improve what I’m eating, so I decided to bake some of my own flapjack to snack on. It’s a recipe that is quick and easy to make, and results in a satisfying filling snack.

Gluten Free and  Dairy Free Flapjack Ingredients

Ingredients

115g Gluten Free Oats
75g Dairy Free butter (I used Pure Sunflower Spread)
75g Almond Butter
125g Honey
75g Dark Chocolate Chips (70% cocoa)
100g Demerara Sugar

You can switch in unsalted butter and standard porridge oats if you don’t need the gluten free or dairy free element to the flapjacks. I used standard porridge oats as I’m okay with oat gluten. You can also use golden syrup instead of honey.

Step 1. Preheat your oven to 150 degrees, and line a tin.
Step 2. Melt the sugar, honey, butter, and almond butter in a pan then remove from the heat.
Step 3. Mix in the oats and allow to cool a little.
Step 4. Add in the chocolate chips. (Make sure it’s not too hot or your chocolate chips will melt like mine did!)
Step 5. Poor the mixture into the tin and level.
Step 6. Bake for 25 minutes or until golden.
Step 7. Allow to cool for a few minutes and using a sharp knife mark out your flapjack pieces.
Step 8. Pop it in the fridge for 1-2 hours to allow it to firm up. Mine was super gooey!!

Gluten Free and Dairy Free Flapjack

I’m eating a slice as I write this and it’s delicious! I was a bit sceptical about it as I’m not so keen on almonds but you can’t really taste them and it is a sweeter taste due to the sugar and the honey.
