Ingredients

    Marinade
    • 1/4 cup chopped white Onion
    • 1 minced Garlic clove
    • 1/4 cup vegetable Oil
    • 2 tbsp white wine Vinegar
    • 2 tbsp Lemon juice
    • Kosher Salt to taste
    • Ground black Pepper to taste
    • 10 ounces cut white Fish
    • 3 cut Zucchin   
    Basil Chimichurri
    • 1 1/4 cups chopped Basil leaves
    • 3/4 cup chopped Parsley leaves
    • 1 tbsp chopped sweet Onion
    • 1 minced Garlic clove
    • 1/3 cup olive Oil
    • 1 tbsp white wine Vinegar
    • 2 tbsp Lemon juice
    • Pinch crushed red pepper Flakes
    • Kosher Salt to taste
    • Ground black Pepper to taste
    • 8 cherry Tomatoes

How to make Fish Skewers With Basil Chimichurri

Step 1: For the marinade: In a bowl, add onions, garlic, oil, vinegar, lemon juice, salt and pepper, and mix together. Step 2: Add in fish and squash and keep it aside to marinate for 15 minutes. Step 3: For the chimichurri: In a processor, add basil, parsley, onions, garlic, olive oil, vinegar, lemon juice, red pepper flakes, salt and pepper. Step 4: Process all the ingredients until get combined well. Step 5: For the fish skewers: Thread the marinated fish and squash onto the soaked skewers and place 1 cherry tomato on the end of each skewer. Step 6: Grill the skewers in a preheated grill and cook until lightly charred outside and fish is cooked. Step 7: Drizzle basil chimichurri on warm fish and serve with basil chimichurri on the side.
