What´s the best recipe using figs? My foodie partner in crime, Dina and I tried four different kind of recipes! A delicious fig arugula and mozzarella salad topped with prosciutto, a grilled fig and cream cheese brie bagel, a vanilla fig crostata and last but not least greek yoghurt popsicles. What´s my favorite? I´d definitely go for the grilled fig bagel and the crostata. mmmh… they taste like heaven! And the most convenient thing about the recipes is that they perfectly work out as a snack, since they are prepared and EATEN in just a short time ;)

For the salad:

  • arugula
  • baby spinach
  • prosciutto
  • mozzarella
  • figs
  • balsamico and olive oil
  • lemon juice from half a lemon
  • salt & pepper

Slice, mix and toss as much as you prefer!

For the grilled bagel:

  • bagels
  • cream cheese
  • arugula
  • brie
  • figs
  • prosciutto

Slice bagel in two halves. Grill in oven (temperature 175°C) for approx. 10 minutes. Smear cream cheese onto grilled bagel, layer with sliced brie, prosciutto figs and arugula.

For the crostata:

Crostata dough:

  • 200g flour
  • 50g sugar
  • 100g butter
  • 1 egg

Put flour, sugar, and butter on your working surface. Start kneading. Use your fingertips to rub the butter into the flour until no butter lumps remain. Add egg and keep kneading until dough is smooth. Roll out and fit into your pie form.

Homemade vanilla cream filling:

  • 1 vanilla pod
  • 1/4l milk
  • 3 egg yolks
  • 50g powdered sugar
  • 30g cornstarch
  • 10 figs

Scrape out vanilla pod pulp and add to milk in a saucepan. Heat over medium temperature. Meantime mix egg yolks and powdered sugar until egg yolks almost turn white, then add cornstarch. Whisk in milk and vanilla mixture and stir constantly until creme will thicken!  Spread vanilla cream on top of the crostata dough and layer with figs on top. Fold sides into the middle and brush the sides with milk. Bake in oven for 25-30 minutes until the tartes have turned golden brown.

Greek yoghurt popsicles:

  • greek yoghurt
  • honey
  • figs
  • thyme

Combine all ingredients and fill into popsicle molds. Attach wooden popsicle sticks or spoons and put into the freezer over night.
