Fig Crumble Bars

These easy fig jam bars, with its buttery crust are full of fall goodness. If you do not have fig jam, no worries use whatever jam you have available.

I keep waxing poetically about my friend Lisa’s fig tree. She was so kind to allow me to pick all the figs I wanted, so in return, I made her some fig bars. She decided to take these bars to school with her and share it with staff and other teachers before school even started.

Yes, the teachers start getting their class rooms ready way in advance.

So that first week of school, when I started volunteering, I got lots of requests for this recipe and comments on how good it tasted.  I used my Fig Jam, but you can use any jam you like. It makes no difference if it is homemade or store bought.

Fig Crumble Bars

Ingredients:

2 sticks butter
3/4 cup sugar
1 teaspoon vanilla
2 1/2 cups all purpose flour
10-12 ounces of fig jam
1/2 cups granola without fruit
1/4 cup flaked coconut
1/4 cup chopped almonds

Directions:

Preheat oven to 350 degrees.
In a large bowl cream the butter and sugar. Add the vanilla and mix until combined. Add the flour and mix on low until it forms a ball. Take 3/4 of the dough and pat it into a 9 inch square baking dish pushing some of the dough about 1/4 inch up the sides. Spread the jam over the dough evenly as you can. With the leftover dough, combine it with the coconut and almonds. Sprinkle over jam mixture. Bake for 45 minutes or until golden brown.
