Farmer's Choice and Pancake Day

Farmer’s Choice are an online butchers, green grocers and deli that deliver completely free range, British meat and produce to homes across the UK.   I am a guest author on their site and they've just published two of my favorite recipes just in time for Pancake Day!  (Shrove Tuesday.)   This year it is on the 4th of March!  So one week from today folks!

Big Breakfast Supper Waffles. We only ever very rarely have a big breakfast in the morning in this house, usually opting to have it for supper instead.   This tasty recipe combines deliciously cheesy corn waffles, topped with all the elements of a tasty full on breakfast with fried eggs, streaky bacon, and grilled tomatoes.  It's just that little bit different than the usual pancake supper.  Of course if you don't have a waffle iron, you can just cook the waffle batter like pancakes ladling the batter out onto your skillet into rounds.

Bacon and Polenta Pancakes.  A fabulously different type of pancakes which are kind of like a cornbread type of griddle cake, North American style.   Deliciously hearty with the use of a polenta/cornmeal batter ladles over top of rashers of cooked streaky bacon and cooked until the flavours are beautifully melted together, flipped over and then popped onto your plate ready to be drizzled with pure Maple Syrup.   Simply fabulous!
