Emergency Gifts: Crispy Christmas Caramelised Apple & Sultana Flapjacks!

Hi there!

It’s only a week until the “big day” and if you haven’t got a gift for that special someone or person you can’t stand but still insist on giving a gift to yet, you’re almost out of time.

Shopping in general can be a rather mundane and gruelling task at the best of times but beating past crowds of people in the freezing cold, waiting in massive queues, well, it’s not my idea of fun unless I have a cattle prod at the ready of course.

Y’know what sounds like more fun?
Staying at home warm and cosy knocking up a few batches of tasty treats instead.

All you need is some pretty jars, some ribbon and maybe a few little Christmas tags and you’re ready to make a sweet treat a lovely gift.

I’ve used glass jars but if you’re on a tight budget you can cut down on costs with pretty cardboard boxes lined with greaseproof paper or something similar which usually come flat packed in packages of 6 or 12.

As for the sweet treats to go in them I’ve used some Jordan’s Apple & Sultana muesli to make some crispy caramelised flapjacks.

You can used rolled oats mixed in with some dried fruit which would be even cheaper but it will probably create a different effect entirely.

You don’t have to use Jordan’s specifically but they do sell some of the best quality oats we have in this country and it comes in lots of flavours like nut & seed muesli or truly fruity muesli, yum.

The recipe couldn’t be much easier and it won’t take much time at all to make them so they’re the perfect emergency gift both to yourself for not having to brave the weather and queues and to the recipient as they stuff their gullet with them.

Crumbled up these would make a delicious topping for vanilla ice cream and their maddeningly moreishness means mega munching time, say that 3 times fast.

Crispy Christmas Caramelised Apple & Sultana Flapjacks
Fills a 1 liter jar

Ingredients

175g unsalted butter
175g soft brown sugar
1 tablespoon golden syrup
250g Jordans Natural Muesli apple & Sultana

Method

Preheat the oven to 150oc.

Line a 8 inch square brownie tray with greaseproof paper and set aside.

In a large pan melt the butter, sugar and syrup together.

Take off the heat and stir in the muesli until everything is combined.

Pour the mix into the tin and smooth it out so it’s flat all over.

Bake for 35-40 minutes or until golden brown.

Place the tin on a wire rack, after 10 minutes of cooling cut the flapjacks into individual squares still in the tin.

Leave to cool completely in the tin before lifting out the greaseproof paper and packaging you flapjacks!
